Late morning - see the beach, Atlantis and Burj Al Arab

Afternoon - see the Dubai Mall and Ski Dubai

Evening - dinner overlooking the Dubai fountain, downtown and Burj Khalifa

If you have a palate for luxury visit the Burj Al Arab and other restaurants that serve dishes incorporating edible gold leaf.

Ski Dubai is a very small hill and pretty expensive. Might be trivially fun, but not actually fun skiing.
